The Weather

The weather plays a key role in maple syrup season. Weather is a crucial factor for a good harvest of maple syrup. Tapping trees occurs in late winter and early spring.

In Ontario, March is a prime month for tapping sugar maple trees.

Good weather for sap production are night temperatures slightly below freezing and sunny days with temperatures slightly above. If the nighttime temperatures are too cold, it takes a longer time for the sap to warm up and ‘run’ in the daytime.

If the temperatures are very cold, the sap may not run at all.
